Black & White Image With One Stand-out Colour
I found this tutorial which shows you how to quickly customize an original full colour image to one which is predominantly black & white but includes 1 colour on part of the image. Again, this is from Luv2help.com just click on the video to play.
Here are a couple of attempts of my own using images from the Internet. I will confess to having to make fair use of the eraser tool on both. You may find the same thing if you use PSE6 too.
